Full-Strength

Mount Wellington / kunanyi

A medium-dark roast, the beans have deep flavours of chocolate and nuts, with a bittersweet aftertaste. With medium-dark roasts, you’ll find little to no acidity. The Thylacine Mount Wellington / kunanyi is best for French press, Moka pot, or espresso brewing.

Notes of nut / hint of spice and full bodied.

Classic Blend

Salamanca

A rich taste with more sweetness, some nuttiness, and a hint of bitterness. It is a medium roast and has less acidity than a light roast. This roast creates a pleasing aroma, flavour, and acidity balance. Thylacine Salamanca roast beans are commonly used for brewing with automatic drip machines, making cold brew or milk coffees such as lattes, flat whites and cappuccinos.

Notes of caramel / chocolate – delicious drinking.

Smooth Light

Port Arthur

Enjoy aromatic flavour, with fruit and floral notes and good acidity. The roasting process maintains the beans’ natural flavours. Thylacine Port Arthur label is best suited to pour-over brewing or the after-dinner experience.

Notes of citrus / floral. Good with dessert / sweet pastries.

It all started in a cosy shed

Brothers Shaun and Kim spent long hours together chatting away through wintry nights in their shed, surrounded by the charming clutter of old Italian coffee machines. Business ideas bounced back and forth, always driven by their shared love for coffee. The pair had a knack for tinkering, tweaking, testing and tasting. This would become the foundation for creating their perfect roast … what felt like Tassie in a cup.


It was in this rustic space that Thylacine Coffee was born. Much like the hidden treasure that our Tasmanian thylacine is, these brothers set about on their mission to deliver locally roasted coffee of the finest quality with notes of Tasmania expressed in every signature blend.


More than just coffee, their mission was to develop this uniquely Tasmanian flavour across their range. Each is an invitation to experience the heart and soul of their home, one sip at a time. These are blends to suit any adventure; whether that be chasing Thylacine shadows in our untamed forests or  at Tasmania’s famed Salamanca Market where the brothers sold their first cup back in 2012.


The duo had everything they needed to produce the best. Tasmania’s clean air and pure waters, along with its reputation for the highest quality food and drink, set the scene for something very special. Based on decades of their own global search for the best brew, to fine tuning their craft, the boutique enterprise has blossomed from that family shed to a thriving factory just outside the capital of Hobart.

Whole bean

Coffee in its purest form, kept fresh until grinding for maximum flavor.

Espresso

Fine grind needed for high-pressure extraction, creating a rich, intense shot.

Aeropress

 Medium-fine grind, slightly coarser than espresso, for a smooth and balanced brew.

Pour Over

Medium grind, allowing controlled extraction for a clean and complex cup.

Plunger

Coarse grind for full-bodied coffee with rich oils and flavors.

Stove Top

Medium-fine grind, similar to espresso but slightly coarser, for bold coffee.

Turkish

 Extra-fine grind, almost powdery, to brew strong, thick, and aromatic coffee.
